Easy Sweet Potato Pie with Canned Sweet Potatoes

Another way to hasten the cooking process is to purchase several cans of pre-cooked, sweet potatoes. These can be easily added without prior heating or cooking. Reserve cooking liquid and thicken with tapioca or cream of tartar and add to the filling.

Mashed sweet potatoes, 2 eggs well beaten, 1/8 teaspoon salt and sugar to taste.
