The History of Sweet Potato Pie
The history of sweet potato pie goes back a long way (to the African slave trade since yams were a produce in Africa). They also go back to Europe, the Antebellum South, and the New England colonists. Those colonists were fond of using pumpkin in dishes until they tried the even tastier and silkier smooth texture of recipes prepared using sweet potatoes. Sweet potato pie is especially popular in African-American homes. Although most cooks don't even use a written recipe because the basic makings have been handed down from generation to generation, a sweet potato pie usually adds milk, butter, sugar, eggs, nutmeg, and vanilla extract to mashed sweet potatoes. Some recipes use cream, wine, rum, maple flavoring, and other delightful ingredients. This custard-filled pie is made in an open pie shell and without a top crust. Top it with marshmallows or whip cream for a yummy finishing taste. Sweet potato pie is also very healthy because it contains vitamins A, C, and B6 as well as fiber and potassium. Sweet potatoes are hardy because they can be stored in a cool, dry place for up to four weeks. Do not put them in the refrigerator. Another type of "sweet potato pie" is the Jewish casserole dish of TZIMMES, which is often served at the Rosh Hashanah (Jewish New Year) dinner celebration. Made with differing combinations of fruits, meats, and vegetables, the most popular ingredients are sweet potatoes and prunes. The key is to bake this at a very low heat in order to have the flavors totally blend together. It is even better the next day! |
