Sweet potato pie is a special southern treat that is often served at large family dinners during the Christmas and Thanksgiving holidays. It looks a lot like pumpkin pie and has no top crust. Here's how to make your own sweet potato pie from scratch to serve at your next family gathering.

First you need to boil the sweet potato. You only need one, as long as it is a large one. It should weigh about one pound. It takes about 40-50 minutes to boil a whole sweet potato in the skin. When you are done boiling the potato, cool it off by running it under cold water, then take the skin off.

Now get a bowl and break the sweet potato up in pieces and put it in the bowl. Add 1 cup sugar, 1/2 cup milk, 2 eggs, 1/2 teaspoon nutmeg, 1/2 teaspoon cinnamon and 1 teaspoon vanilla. Beat smooth with a mixer on medium and pour the sweet potato mixture into a pie crust that has not been baked.

The pie needs to bake for 55-60 minutes at 350 degrees. When it is done, you can insert a knife into the center of the pie and it will come out clean. The pie may appear puffy when it first comes out of the oven but it will settle as it cools.
