Vegan Sweet Potato Pie Recipe
Here is an easy version of vegan sweet potato pie. First, remove the skins from your sweet potatoes. Boil the sweet potatoes in a small amount of water on your stove top until the potatoes are soft. Remove from water and let cool. You will need two cups of sweet potatoes for this recipe. Once your sweet potatoes are cool, put them in a medium sized mixing bowl and fluff with a fork. This makes it easier to stir the batter. Preheat your oven to 400 degrees F. Place an unbaked vegan pie crust in a nine inch pie pan. Prick the bottom of the crust with a fork to allow any steam to vent during the baking process. To your bowl of sweet potatoes, add one cup vanilla or plain almond milk, a half cup of honey, two tablespoons of maple syrup, three tablespoons of olive oil, one fourth cup of arrowroot powder, a teaspoon of vanilla extract, a half teaspoon of sea salt, a fourth teaspoon of ground cloves, a fourth teaspoon of ground allspice, a half teaspoon of ground ginger, a half teaspoon of ground nutmeg and a half teaspoon of ground cinnamon. Mix all the ingredients together at medium speed with an electric mixer. Beat until the batter is smooth and creamy. Carefully pour your mixture into your waiting pie crust.
Place your pie in the oven to bake for fifty-five to sixty
minutes. You can test your pie for doneness by inserting a knife
in the center of the pie. The pie is done when the knife comes
out clean. |
